Half Hog Custom Packages Available!!  

Pork will be frozen, vacuum packed, labeled and ready for pick up the weekend of  MAY 20, 2017!!

 Order a half hog custom package, raised on dirt at our family farm. With your order you will receive ground sausage (1 lb. packs), boneless chops, steaks, shoulder roast, tenderloin, baby back ribs, spare ribs, bacon, bacon ends, neck bones, jowl, ham hocks, a half ham and ham steaks.  Jowl, bacon and ham will be smoked.  All cuts are vacuum packed, labeled, and frozen. A half of a hog (to include meat, processing, and smoking) will cost approximately $250, depending on live weigh of the hog at the time of butcher.

    HEY!!! We have just run out of beef (my husband and his father butchered their cow this spring but it didn’t yield much). So here we are in fall completely out!   4. If I order a half hog will the sausage be nitrate/nitrite free?

    • The sausage will not have nitrate. If you get the ham and bacon smoked, there will be a small amount for the USDA requires it in the smoking process. You can get your ham and bacon as fresh, but that changes the taste completely. You can order it either way.

    • Hi, Glen. At this time I don’t know. We are out of lamb and since we raise it all, it will be a couple of months before we have any. I will post on Facebook and on our webpage when we have more available. We just were not prepared for all of the interest in lamb. 🙂

    Do you guys sell beef bones to make bone broth?

  12. Are any antibiotics used on animals and if so, which types?

    • Only an animal who is sick gets a shot of antibiotics. We do not systematically use antibiotics and we do have antibiotics in their feed. Antibiotics are used sparingly and only if an animal has an issue. We follow the withdrawal period. Our steers run as a herd together, and rarely is there ever an issue that needs antibiotics.

    I work with Meghan and am preparing to go on the ketosis diet. Do I have to order in bulk or can I make small periodic orders?

    • Hi, David!
      We sell by the cut, so you can place small orders or you can order a bundle. Small periodic orders are just fine also. Hopefully we can talk Meghan into bringing it with her to work. 🙂

  14. How much meat in a quarter of beef. About how many steaks roast hamburger stew meat

  15. do you sell ham shanks? I use for seasoning beans rather than ham hocks. I can’t seem to find anyone that sells them in St. Louis anymore.
